Sambar Recipe
Ingredients:
- 1/2 cup toor dal (split pigeon peas)
- 1 small lemon-sized ball of tamarind
- 2 cups mixed vegetables (such as drumsticks, eggplant, carrot, and okra)
- 2 tomatoes, chopped
- 1 onion, chopped
- 2 green chilies, slit
- 1 teaspoon sambar powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- 1/2 teaspoon fenugreek seeds
- 1 teaspoon mustard seeds
- A pinch of asafoetida (hing)
- Few curry leaves
- 2 tablespoons oil
- Salt to taste
- Fresh coriander leaves for garnish
Instructions:
- Wash the toor dal and pressure cook with 2 cups of water until soft and mushy. Set aside.
- Soak the tamarind in warm water for 15 minutes and extract the juice. Set aside.
- In a large pot, add the mixed vegetables, chopped tomatoes, chopped onion, slit green chilies, sambar powder, turmeric powder, red chili powder, and salt. Pour in enough water to cover the vegetables, then bring to a boil and cook until the vegetables are tender.
- Add the tamarind juice to the cooked vegetables and simmer for 10 minutes.
- In a separate small pan, heat the oil and add the fenugreek seeds. When they start to change color, add the mustard seeds. Once the mustard seeds start popping, add the asafoetida and curry leaves. Pour this tempering over the simmering sambar.
- Finally, add the cooked toor dal to the sambar and simmer for an additional 10 minutes, allowing the flavors to meld together.
- Garnish with fresh coriander leaves and serve hot with steamed rice, idli, dosa, or vada.
